FRIED CHEESE (SAGANAKI)

This is traditionally served as a light lunch, an appetizer, or as part of a meal. Saganaki dishes take their name from the pan in which they are made. A sagani is a two-handled pan that is made in many different materials. In the store, look for a small cast iron skillet, or even an oval au gratin dish. Saganaki is always served on small heated plates.

Ingredients

  • 1 lb Kefalotyri or Kasseri cheese

  • 1/2 cup Olive Oil

  • 1/2 tsp SpicyGreek Vegetable Blend

  • 2/3 cup Flour for dredging

  • 2 Lemons, quartered

  • Fresh Oregano

Directions

  • Cut slices of cheese about 1/2 inch thick

  • Mix SpicyGreek® Vegetable Blend into flour and lightly dust each piece.

  • Heat the olive oil over medium-high heat, and sear each slice in approximately two tablespoons of oil until golden-brown on both sides

  • Squeeze some fresh lemon juice over each slice

  • Sprinkle each piece with fresh oregano

  • Serve piping hot.
