  • 1 1/2 lbs Zucchini (3-4 Squash)
  • 1 tbsp SpicyGreek Vegetable Blend
  • 6 tbsps All-purpose flour
  • 1/2 cup Olive Oil

Zucchini grows abundantly throughout Greece, and the smaller the zucchini the better the Greeks like it...

  • 1 1/2 lbs Zucchini (3-4 Squash)
  • 1 tbsp SpicyGreek Vegetable Blend
  • 6 tbsps All-purpose flour
  • 1/2 cup Olive Oil

Directions

Zucchini grows abundantly throughout Greece, and the smaller the zucchini the better the Greeks like it…you would never see one in the marketplace over six inches long. Serve Fried Zucchini with Tzatziki sauce (see recipe).

  1. Scrub and rinse the zucchini, slice them lengthwise 1/4 inch thick, then lay them flat on paper towels. Allow to sit undisturbed for 15 minutes to remove moisture.
  2. Pat each slice completely dry. Sprinkle each side of all slices with SpicyGreek® Vegetable Blend. Dredge each slice in flour.
  3. Heat olive oil in a large frying pan until hot but not smoking.
  4. Fry zucchini slices, watching them carefully so they won’t burn, until crisp and golden brown (about 2 minutes per side).
  5. Drain on paper towel for a few minutes before arranging on a warm platter.
